Call Me Susie Homemaker

I, David Lasley, am baking cookies this afternoon.

yes. it's true. My afternoon is being spent with cookie sheets, spatulas and cookie dough. Ok so i didn't make the dough. Mom made the dough. But it's ok. someone's gotta get 'em cooked right?




So that's what i'm doing today. And while i'm on this food/cooking kick, I want to share a little bit about my favorite food. I've been wanting to create this post for a long time.

I am a huge fan of nachos.

They are by far my favorite food. At any point during the day, breakfast, lunch, dinner, midnight, 2:31 in the morning...it doesn't matter---if you put a bowl of cheese dip and a bag of tortilla chips in front of me, i would down them like nobody's business.

Ok so i have several recipes i would like to share on here. They are quite simple, but will make your taste buds sing.

Late night snack dip
1/8th block of velveeta
1/2 cup salsa
Tortilla chips

Cube the cheese...put ingredients into a bowl. Microwave for around 4 minutes...stirring every minute or so.




Easiest Cheese dip evaar:
1 block Velveeta Cheese
1 can of Rotel Original Diced Tomatoes and Green Chiles
1 bag Tortilla chips (I would recommend buying the cheapest ones because I've eaten a lot of tortilla chips and they all taste the same)

Slice cheese into cubes. Dump all ingredients in a crock pot on low heat. Stir. Wait until cheese is melted...

and enjoy! this one is usually doubled or tripled and makes a great party type of dip.



My favorite cheese dip...and yes that is what it shall be called.
1/2 block of velveeta cheese
1 can Hormel no bean chili
16 oz. cream cheese
1 bag tortilla chips(see above)


Preheat oven to 350 (this really doesn't matter that much. You can put it in the microwave if you would prefer).

Spread cream cheese evenly over the entire bottom of a glass dish/pie plate of some sort. Pour chili over top of the cream cheese and spread evenly. Cut cheese into slices over top of the chili until the entire top is covered. Put in oven or microwave until cheese is melted on top.


And then...




CONSUME!!!!!


...with chips...

...the spoon is optional and is usually reserved for the lucky soul who is left with the crumbs at the bottom of the bag. This person has the means to shovel massive amounts of chips and cheese into his mouth. A pro (must be a rather large human being with stomach of steel...or a Lasley :) ) could probably consume with a spoon at an average of 50 spm (shovels per minute).

ok don't mix the tortilla chips into the dip before it's melted. that would be gross. i'm terrible at writing recipes. Hopefully you guys can figure out what i meant...

in all those dips it doesn't hurt to add some milk to stretch the cheese a little. I know i forgot to say to put milk in at least one of the dips.

the best type of cheese, at least in my opinion, is found at (gasp)wal-mart and it is called "mexican dipping cheese" please dont scold me from shopping at walmart...i live in a small town where there is only 2 grocery stores, both huge corporations, so walmart is cheaper and i go there...they are no worse than the other though....

but i digress...you take a little butter, and little flour, and you put it in a sauce pan and you make a roue(spelling?) and then you add milk and loads and loads of said MDC...heat and stir for around 15 or so minitues, adding more cheese or milk, depending on how thick you like it...

i prefer to stop by the local mexican restaurant and pick up chips because contrary to your previous statement, mexican restaurant chips are better than store bought chips...

So Dave, can I call you Dave? I don't think we've met. I was so inspired by this post that I had the late night snack recipe for lunch and I have to agree, it's simply greatness. So thanks. Just for that, I'm going to ignore the subtle attack on both mine and my brother's characters. Just don't let it happen again.

So your from Charleston or something? I won't hold that against you either.

I'm trusting that the cookies tasted great - especially since your mom did the real work of making the dough....but maybe we could work on presentation?? How about a decorative platter, perhaps?!
